No-bake Chocolate Peanut Butter Bars

What’s not to love about a no-bake sweet treat? Especially one that is healthy. Well, I justify it as healthy. Ha-ha! After all, you have…Oatmeal…a whole grain that’s a good source of fiber, Peanut Butter…for protein and Dark Chocolate…for an antioxidant. But seriously, these are tasty and super easy to make.

What you need:
For the bars
1 cup peanut butter (creamy or chunky)
1/2 cup light corn syrup
1/2 cup powered sugar
2 tablespoons butter
2 cups oats (quick or old fashioned, uncooked)

For the topping
1 cup dark chocolate morsels
2 tablespoons peanut butter

Preparation:
Peanut Butter Bar Ingredients For bars, in medium saucepan, heat 1 cup peanut butter, corn syrup, powered sugar and butter over medium-low heat until butter is melted (about 3-5 minutes). Stir frequently. Remove from heat.
Stir in oats, mixing well.
Spread onto bottom of an ungreased 8 or 9 inch square pan; set aside.

For topping, place dark chocolate morsels in medium size microwave safe bowl. Microwave on HIGH for 30-60 seconds, stirring after 30 seconds, until smooth.
Stir in 2 tablespoons peanut butter until blended well.
Spread evenly over the bar mixture.
Refrigerate at least 30 minutes or until chocolate is set.
Remove bars from refrigerator. Let stand for about 5 minutes (will be easier to cut).
Cut bars with a sharp knife in 4×6 rows.
