Orders To Go…

My son finally received orders to a new duty station – Marine Corps Air Station Beaufort – in South Carolina. That puts him, my daughter-in-law and two grandchildren (22 months old and just 3 weeks) that much closer to us! He was stationed in Yuma, AZ for the past six years, which made visits less frequent than either my husband and I would have liked. Thanks to FaceTime we “see” him and his family often. However, this past week I have been fortunate enough to see everyone face to face – no FaceTime!
I’ve been in South Carolina, along with my daughter-in-law’s Mom, helping with the move into their new home, hence, the reason I have not shared any recipes. The first couple of days there was nothing except a couple of blow up mattresses and lawn chairs. That was until the movers showed up on Tuesday. Yet, even then, the kitchen was a day or two away of being unpacked. We made due though. A few days of take out food and then the “Grandmas” kicked into “Pioneer Women” mode with ingenuity and creativity. We used what bowls and plates we had along with Knorks (disposable knife and fork flatware). Definitely a challenge, but it was fun.
Once the kitchen was organized I was ready to cook. So excited! The first few days I served up my standards…Crock Pot Tater Tot Casserole (July 12, 2013), Lemony Chicken (June 21, 2013) and Simple Scrumptious Spaghetti (June 6, 2013). Then I thought, with other cooks In the house, surely I could get them to make some of their favorite dishes! My daughter-in-law prepared one of my son’s favorite dishes…Crock Pot Pulled Pork.
It was delicious! Here is her recipe…

What you’ll need:
Crock Pot
3 pound Boston Butt
Salt and Pepper (to taste)
1 large or 2 medium onions, quartered
Water (enough to cover meat about 3/4)
Liquid smoke, 1 teaspoon or to taste (optional)
1 bottle of your favorite BBQ sauce
Hamburger Buns

Preparation:
Rub the meat with the salt and pepper. Place meat in the crock pot. Place quartered onions around meat. Add water (and liquid smoke if using).
Cover and cook on low for eight hours or until the meat is tender and easily pulls apart. Remove the single shoulder blade bone. Using a slotted spoon or some tongs remove all of the chunks of meat from the crock pot and set aside in a large bowl. Allow to cool until it can be easily handled. Pull the meat apart with two forks. Place the meat in a bowl and cover until ready to eat.

At this point you can either serve the pulled pork plain on a hamburger bun or add enough of your favorite barbecue sauce to coat the meat. Serve warm with baked beans and coleslaw.
